Chocolate Peppermint Mug Cake

Are you ready for some mouth watering Christmas yumminess to share this season? Well, get out your recipe books and add this cake to your list! I know I am always looking for fun treats to make around the holidays. I love reading all your blog posts about the treats you make for your friends and families. Let me tell you – we enjoy all desserts – but this mug cake by far is the winner!! Easy ingredients and NO OVEN BAKING. Seriously. I saw the original recipe on the family kitchen. But of course I couldn’t leave it alone. I had to add a little Christmas flair to it! So please pull up a cup (but leave it empty) so you can fill it with this delicious chocolate peppermint mug cake! {Did I mention you don’t even need to use your oven for this? Just checking!}

HOW TO MAKE YOUR OWN CHOCOLATE PEPPERMINT MUG CAKE

INGREDIENTS:

4 Tbs self rising flour (I’m pretty sure the self rising part is important)
4 Tbs white granulated sugar
3 Tbs cocoa powder
3 Tbs Nutella (Yeah, I said Nutella)
3 Tbs Olive or Vegetable oil (I used Veggie)
1 egg
3 Tbs PEPPERMINT Mocha creamer (This is the trick! Or you can replace with any flavored creamer you enjoy! Do I hear Caramel anyone?? Not a creamer fan? Use MILK!)

SUPER HARD DIRECTIONS {wink}
1. Mix everything together in a small mixing bowl.
2. Pour mix into one very large Christmasy (it’s a word!) coffee mug or 2 regular sized mugs. Fill your mug about HALF WAY because the mix WILL rise!
3. MICROWAVE (That’s right!) for 1 1/2 – 2 minutes! Times are approximate depending on your microwave. (Check with a toothpick like you would a real cake to see if it is cooked all the way through to the bottom!)
4. Top with whipped cream and chocolate syrup like I did or with frosting and ENJOY!!!!

Santa, Are You For Real?

If your kids are too young to ask that question – don’t worry they will! And if they already have, I’d love your insight! Because {are you sitting down?} I grew up with parents who never taught me to believe in Santa! I mean, I knew who he was, I knew all the reindeer by name, but I always knew he wasn’t real. In fact, my first recollection of the answer to the Santa question is this book:

Honestly, it explained things really well. Through this book I grew up learning the Christmas story from the Bible and that Santa was a modern day version of a real Saint name Nicholas. This book explains how a wealthy young man named Nicholas saw the needs of the poor and would secretly leave toys in their stockings at night. He became known as “St. Nick” and many other names, including Santa Claus.  Because of St. Nick, people around the world carry on that tradition of giving gifts and stuffing stockings. The book also had a neat way of connecting it to the Bible Christmas story!

So, here's REALITY. That is all well and fine – until I had kids of my own. It was easy for my first son. He was mostly around adults. We played up Christmas and Jesus’ birth, played down Santa and he loved the gifts and attention. Until he was 3. We were at a our local community center having hot chocolate and Christmas treats. Halfway through the night Santa makes his appearance! The kids go wild. Santa sits down and slowly starts handing out gifts {pre sent by the parents} to the kids one by one. My 3 year old looked at me delighted and said, is Santa going to give ME a gift too? I looked right into his big brown eyes and said:
“Of course he is sweetheart!”
{And then proceeded to run home and get a pre-wrapped gift for Santa to give to my kid too!} And so entered Santa into our celebrations.

Now, I have to be honest, I did not know all the things there were to do surrounding Santa’s arrival. I’d never left cookies, made reindeer food, or anything of the sort. {Don’t feel sorry for me, I grew up *somewhat* well adjusted.} ;o) But I felt awkward presenting something to my son I didn’t grow up believing in and I felt like it would come across as awkward and a lie. So, yes, the focus of the season was Jesus’ birth and the Christmas story, but Santa was still there on the side. We made cookies and milk, visited Santas and when he asked questions like “If we don’t have a fireplace, how is Santa going to come into our house?” I’d answer “Well, if Santa was real, where do you think he’d come in?” His answer: “The keyhole!” Sounds good to me! :) I think he always knew in his heart Santa wasn't real, because there was never an awkward question or a moment when he had "the realization." He just accepted the truth as something he already knew anyways.

So, Santa didn’t REALLY take off until son #2 was born. Little man loves the MAGIC in EVERYTHING – especially Santa! And despite my up-playing Christmas and down playing Santa, he was a Santa fan from birth. And so, last year, we finally did Santa – FULL OUT. I mean, we left him cookies and milk, we wrote letters and Christmas morning I sprinkled coal around the fireplace as if Santa had knocked them out. It worked. The magic in his eyes was priceless. Inside, I'm still not comfortable doing Santa, but I also know that this magical time isn’t going to last forever. I see it slipping away day by day and I can already tell this year will probably be Little Man's last year believing in the magic of Santa. Ironically, I’m a little sad about that. But, what's comforting is Little Man knows the REAL meaning of Christmas too and when the question “Santa, are you for real?” comes along, at least I’ll be ready. {Btw - I HIGHLY recommend that book!!} And in the meantime, we made this video from the North Pole, while we still can...





{FYI – you can make this PERSONALIZED for any kid and adults too! Santa talks to your kid and tells him in what area he wants him/her to behave! "I'll be watching" he says! Love it!! They also have lots of funny options for adults! I even made one for myself! So check it out and have some fun!}

When You Need a Lift


We’ve all been there.
Tired.
Weak.
Long day.
Long week.

Sometimes we travel through those times smoother than others. This past couple weeks, I’m not sure I’ve been doing a very good job at it. I’ve been TIRED. And never seeming to catch up. Not on emails, or blog comments (sorry) or grading papers or sleep (what time is it right now?) My little man has been battling bronchitis. Small beans in the scheme of life, but still. Amazing how one little thing can totally throw you off isn’t it? Poor little guy was laid out for 2 weeks. I missed a week of work and the whole family was off our routine. The good news is the past few days we are slowly getting back to normal. Little man was finally able to go back to school, and I went back to work. He’ll get better, emails will get answered and papers will get graded… eventually. And yes, I reread my "Real Mom or Super Mom?" post to remind myself that there are going to be days when I just can’t do it all. {And sometimes not ANY of it.}

In fact a story was told to us at work today. Connecting it to this blog post may be a stretch, but it’s so motivating, it’s worth it. It reminds me that even strong people find themselves needing a lift. This is not a new story either; perhaps you’ve heard it. It was all over the news and YouTube. It’s the story of Sara Tucholsky a Western Oregon softball player. Her entire softball career (we’re talking little league, high school and college) she had never hit a home run. She was up against all-stars in her sport; it was her senior year and a tournament game at that. Up came her turn at bat and when she connected with the ball, it sailed easily over the fence giving Sara her first ever career home run!! In her excitement, she ran past 1st base, just missing the bag with her foot. She double-backed to touch the base and in so doing tore a ligament in her knee. She immediately fell to the ground and crawled back to first base, reeling in pain, not sure what to do next. Instantly her coach began talking to the umpires. If coaches or her team mates touched Sara or carried her to home plate, she would be out of the game and her home run would not count. If they put in a pinch runner, Sara’s homerun would only count as a base hit. Sara obviously could not move herself, and it seemed that her softball career was going to end in disappointment. But then, the unexpected happened. Short stop Mallory Holtman and first baseman Liz Wallace from Central Washington, the opposing team, realized that Sara’s team couldn’t help her, but THEY could. They picked Sara up and carried her around the bases, touching her foot on each base as they passed, and carrying her home.

Sara’s homerun counted! They expected to hear cheers for Sara as they crossed home plate, instead, when they looked up, they saw faces full of emotion and tears for their gracious act of sportsmanship. Western Oregon ended up winning the game that day. When asked by reporters WHY they helped the opposing team, Mallory and Liz simply said, “Because it was the right thing to do.”

We are all going to find ourselves in times of need in our lives. And {note to self} needing help isn’t weak, it’s healthy. You never know when you might bless someone else by helping them, and if you don’t ask for help yourself, you’re taking away someone else’s opportunity to bless others. So, when it comes to these kinds of choices in life, whether I’m tired, weak, weary or winning the race; I hope I have the strength to do the right thing too; to help and be helped and understand I don't always have to do it alone.

How do YOU Pinterest?

I am IN LOVE with Pinterest!! In fact, I can’t imagine what life was like without it! I mean, HOW did we bookmark our favorite sites before?? ;o) I just know there are so many ways to use Pinterest that I have yet to explore – here is what I use it for right now --

1) FOOD – Pinterest has made me a better cook. This ham & egg breakfast delight was Pinterest inspired. It was all my son would eat for two days while he was sick. I have a loooong list of goodies to make on my Food Even I Can Make board!

2) CLOTHES – well, if I looked HALF as good as my Pinterest My Style board, I would be one hot mama. I DO look for SOME of those clothes, but when you do most of your clothes shopping at Tarzhey, they’re kind of hard to find. ;o) New Year’s Resolution, branch out in {affordable} style. ;o) I did copy one Pinterest look though:

She managed to look chic and I managed to look like a pirate. It’s still a work in progress. :)

3) HOME DESIGN – Pinterest is SO inspiring for home décor and room designs! When I decorated my sister’s nursery this summer, we used Pinterest as a design inspiration board to bookmark ideas, including that book sling below, and coordinate a theme. Here is her Nursery Inspiration Board.

4) CHRISTMAS LISTS!!! – Yes, I have taught my boys to “Pin It!” :o) It is an easy way to view their Christmas {and birthday since they’re all so close together!} lists, plus each picture links to the site where you can buy the gift! This is PERFECT for family who lives farther away!! Can you tell what toys Little Man is into right now?

I even made a wish list for myself! :):) But mostly so I can see things I need/like because whenever I get a gift card, or family asks, I always forget and end up wasting the money on an impulse buy. Maybe now I will be more focused!!

Isn't this a great idea? {Have I used this yet? Ummm, no. See reason from style board above. If I was as organized as my "Organize It" pin board I wouldn't need a maid. But I can DREAM of being this ultra organized!} ;o)

A Thankful Treat


Hello friends! Is Thanksgiving really next week?? Already? Well, if you need a quick little thank you gift – today, I’m your girl! :) This is quick AND easy! {Hmmm, I tend to use that term a lot with food…} ;o) Wrap up this snack mix and give it to your favorite teacher, buddy or save it for a fun table snack on Thanksgiving day!

Here is what you’ll need:

  • Bugles Chips {A must! They look like little cornucopias!}
  • Fall M & M’s {These may be hard to find since it IS November & most candy around is already red & green – don’t get me on THAT soap box right now!} ;o) Reeses Pieces also makes a good substitute.
  • Candy Corn or Indian Corn {CVS sells candy corn year round! <---- I just learned that!}
  • Clear cups or cute container to put your candy mix in
  • Cellophane and twine (optional) to wrap up your sweet treat!
Once you gather your supplies, you simply mix equal parts of the snack into individual little cups or treat boxes and give to someone you are thankful for!!

Here is how I wrapped up my little treats. I will be giving these to the office staff at my work as a little 'Thanksgiving Thank You.' :)

I used these printable tags from anna and blue paperie and glued them to the cups. I wrapped each one in cellophane {For some reason I am not gifted when it comes to wrapping in cellophane. Do they give classes on that? lol I know. It’s not that hard. Sigh.} Anyways, I then tied each one with twine and they are ready to go!

See? Easy! ;o) I needed 16 little gifties to give to people at work, so quick, easy {and affordable} is always my kind of project – even though these ladies are worth a million bucks! I am SO thankful for all they do for us teachers, I try to treat them a few times a year! Thanks ladies!! I may even give one of these to my son's teacher! How about you?
